I have made this recipe countless times over the years and it really is one of the easiest, most successful recipes I've ever come across. It's so simple, mix two set of ingredients and then mix them together, pour into a tray and Voila! I don't know why I have so much trouble getting eggless cake recipes to rise sometimes. This one rises like a charm EVERY time.
 
I thought it was a little odd to start with, putting dates into a pudding, but honestly, they add to the sticky toffee-ness of the pudding. I once got one of those silly vegan questions posed to me - "Why do you call it sticky toffee pudding when it doesn't have any toffee in it? Why not call it sticky date pudding?" Soon after his first bite he swallowed his words and shut his mouth! Couldn't believe it actually tasted like toffee.

This would be the recipe I'd recommend to impress doubters or non-vegans. They will never be able to tell it's egg and dairy free. Promise.
