Chocolate Orange Cake

Totally suitable for when you’re craving cake, have no-one to share with and need to eat it all on your own. I did.

275g self raising flour
40g cocoa powder
1 tsp vanilla essence
200g caster sugar
100ml vegetable oil
200ml orange juice (or water if for some reason you don't want a chocolate orange cake!)

And for the icing:
50g vegetable spread e.g. Pure
30g cocoa powder
100g icing sugar

Pop the dry ingredients in a bowl, make a well in the middle, add the liquid ingredients and mix thoroughly with a spoon. Split the batter evenly between two 8” greased and floured sandwich tins and bake at 200 degrees for 25 minutes.

When cool, mash the vegetable spread with the cocoa and icing sugar until smooth and blended evenly. Spread thickly on one of the cake layers then sandwich the other layer on top. Make some chocolate buttercream blobs on top of the cake and top with chocolate buttons.

Fetch your fork.
